Hamburger Carrot Casserole

4 potatoes
4-5 carrots
1/2 medium onion
1/4 cup rice
1 lb hamburger
1 can of tomato soup
1 can of water

Cut up potatoes and carrots. Boil in water with a little salt until almost tender. Drain. Brown hamburger, onion and rice together. Drain Stir together vegetables and hamburger. Add tomato soup and water.

Bake 350 for 30-45 minutes.


Hamburger carrot casserole is a family favorite, especially for the fall/winter, because it sticks to your bones (can you tell I was raised on the farm)! 😀 We love to serve bran muffins with it. It freezes well too!
